Le matcha trouve son origine dans la Chine des Song (960\u20131279). Le th\u00e9 \u00e0 cette \u00e9poque \u00e9tait en effet r\u00e9duit en poudre puis fouett\u00e9 dans l\u2019eau chaude. Cette m\u00e9thode fut introduite au Japon par le moine zen Eisai \u00e0 la fin du XIIe<\/sup> si\u00e8cle, puis magnifi\u00e9e par la culture japonaise au fil des si\u00e8cles.<\/p>\n

Il est aujourd\u2019hui le th\u00e9 le plus en vogue au monde, et se boit pur ou bien d\u00e9clin\u00e9 sous de nombreuses formes : matcha latte, glaces, p\u00e2tisseries, chocolats et autres cr\u00e9ations gourmandes.<\/p>\n

Le matcha que nous vous proposons a \u00e9t\u00e9 ombrag\u00e9 minimum trois semaines avant r\u00e9colte, afin de garantir sa douceur et son taux \u00e9lev\u00e9 en L-th\u00e9anine. Etant de grade sp\u00e9cial (grade c\u00e9r\u00e9monial dans le langage occidental), il est pr\u00e9f\u00e9rable de le boire pur pour en appr\u00e9cier toute sa saveur. Il sera cependant excellent en latte.<\/p>\n

Ses ar\u00f4mes herbac\u00e9s, ses saveurs umami et l\u00e9g\u00e8rement sucr\u00e9es en font un matcha s\u00e9duisant tant par son prix attractif que par son profil organoleptique.<\/p>\n

La soci\u00e9t\u00e9 \u8d35\u5dde\u94dc\u4ec1\u8d35\u8336\u8336\u4e1a\u80a1\u4efd\u6709\u9650\u516c\u53f8 (Gu\u00eczh\u014du T\u00f3ngr\u00e9n Gu\u00ecch\u00e1 Ch\u00e1y\u00e8 G\u01d4f\u00e8n Y\u01d2uxi\u00e0n G\u014dngs\u012b) s\u2019impose aujourd\u2019hui comme le leader mondial de la production de matcha. Elle a en ce sens particip\u00e9 \u00e0 la r\u00e9daction de la norme provinciale officielle relative au matcha du Guizhou en 2017, et figure \u00e9galement parmi les organismes r\u00e9dacteurs du projet de norme nationale chinoise consacr\u00e9 aux techniques de production et de transformation du matcha (2024).<\/p>\n

En 2018, elle a cr\u00e9\u00e9 dans la province du \u8d35\u5dde (Gu\u00eczh\u014du) en Chine deux super-usines enti\u00e8rement consacr\u00e9es \u00e0 la fabrication du matcha, alliant une qualit\u00e9 et une tra\u00e7abilit\u00e9 aujourd’hui remarquable.<\/p>\n

Le matcha que nous vous proposons ici correspond au \u00ab\u00a0grade 2\u00a0\u00bb, dans la classification des matcha du \u8d35\u5dde (Gu\u00eczh\u014du). Il correspond \u00e0 ce que l\u2019on d\u00e9signe couramment en Occident comme un \u00ab grade c\u00e9r\u00e9monial \u00bb. Le grade 1 (le niveau encore au dessus) n’est fait qu’en tr\u00e8s petite quantit\u00e9 (quelques kilos par an) pour certains cadres de la province.<\/p>\n<\/div>\n
